Chunky Chopped Salad with Fresh Herbs
Makes one generous serving, just keep doubling to make for more folks....

1/8 red onion, chopped
6-8 cherry tomatoes. halved
Half an avocado, chopped
A mittful of fresh cilantro, chopped (see photo in gallery for a mittful of cilantro & parsley)
A mittful of fresh parsley, chopped
2 tbsps of fresh mint, chopped
6-8 kalamata olives, pitted and halved
2 tbsps of blue cheese, crumbled
A splash of olive oil
A splash of balsamic vinegar
salt & pepper to taste

1. Boy, can you ever tell it's a recipe from me when measurements are splashes and mittfuls. Eeeeee, sorry. Wash all fresh ingredients and start chopping away. The size of the chop does not matter, just however you like it.

2. In a bowl, mix together onions tomatoes, avocado, parsley, cilantro, mint, avocado and olives. Add the splash of olive oil, really just enough to lightly almost cover the ingredients. Mix. Do the same with the balsamic, only add a little less. Mix. Season with salt & pepper. Mix. Add in the crumbled blue cheese and lightly stir. Serve.

Depending on the season, and whatever comes up in the garden, I tend to add chives, fresh oregano, sometimes thyme... the more herby the better in my mind. It packs a punch.
