Lia's Caramelized Onions, Goat Cheese & Bacon Skillet Jam Pizza

5 small flat breads, I used oblong naan bread from Pete's
1 cup of tomato sauce
2 onions, sliced into thin crescents for caramelizing
2 tablespoons of canola oil
1 tablespoon of butter
1/2 cup of goat cheese, I am in love with our local Ran-Cher Acres
1/3 cup approx of bacon skillet jam, I used to order this online from the US here, but Pete's now carries it. At some point, I will make my own.
Romano to generously sprinkle across tops of pizza
2 tablespoons of oregano
Pepper, across pizza at finish

1. Caramelize onions. In a cast iron skillet on med-high, melt the knob of butter and add in a couple of tablespoons of canola oil. Once hot, throw in the onions and fry, browning and stirring them for a couple of minutes. Then turn the heat to low and let them sweat it out and reduce for half an hour or more. Set aside and cool.

2. Preheat oven to 350ªF. Place five flatbreads on a pizza tray and spread evenly with tomato sauce to edges. Dollop little spoonfuls of bacon jam across pizza surface. Do the same with goat cheese. Spread caramelized onions across each pizza. Finish with romano, oregano and pepper. Place in oven for about 20 minutes. Remove when crust starts to get golden brown, the great thing about this version of a pizza is that nothing needs to be truly cooked, so it doesn't need much time. Let rest and eat!
