Welsh Rarebit with a Spicy Blaenafon Cheddar Twist
Serves 2

4 slices of hot buttered toast
1 cup of grated strong, old cheddar cheese (traditional rarebit calls for Caerphilly cheese)- I used Anadl y Ddraig (Dragon's Breath), a hot chili cheddar from Blaenafon Cheddar Co. from our Welsh cheese haul
2 tbsp butter
3 tbsp milk
1 tsp dry mustard
3 drops of Worcestershire sauce
Salt & Pepper to taste

1. Make toast. Butter and set on an oven tray. Pre-heat oven broiler.

2. In a small saucepan, melt the butter. Stir in the remaining ingredients with a whisk over low heat until melted and smooth. Pour over the toast. Quickly place under the hot broiler and remove when toasted, bubbly brown. Serve hot. Great with a light green salad or soup on a cold day. Or any day.
